T & T Supermarket New Central Bakery and Cold Storage design and construction VIRTUAL provided the full Mechanical & Electrical (M&E) Engineering design for T&T’s Central Bakery, a 2,000 square feet area, located in Unit 2 of T&T’s Eastern regional office with capacity to provide baked goods to major T&T stores across Toronto. VIRTUAL through its M&E design successfully achieved the upgrading of an existing warehouse facility into a functional Bakery area utilizing the refrigeration system. The M&E design was done for Phase I of this Bakery, which will be expanded in a second phase. This project included the HVAC design for the bakery area, taking into consideration minimum ventilation requirements as per ASHRAE 62.1 (Ventilation for Acceptable Indoor Quality) and ASHRAE 90.1 (Energy Standard for Buildings Except Low-Rise Residential Buildings) standards. The designed HVAC system is capable of providing cooling, heating and the required make-up air the exhaust taking place from the oven hood installed in the bakery. The HVAC system has an economizer cycle to ensure energy efficient operation. The project also included plumbing and fire protection system design for the area. The electrical service designed included an assessment of the present load at the existing Unit 2 to accommodate the services for the Central Bakery in Unit 2. Design included checking the electrical service to the property, power distribution, lighting, security plan, mechanical load and site lighting. VIRTUAL worked in conjunction with kitchen specialists in order to ensure that equipment selection was appropriated and the services were provided for all ovens, proofer retarder, mixers among others, in an efficient manner.
